This salad is great for entertaining, week night dinners, and easy lunches. I’m sure it’ll quickly become one of your favorite salads to make!
Ingredients
- Arugula
- Watermelon
- Freshly squeezed lime juice
- Olive oil
- Mint
- Salt & pepper
That’s typically all I add into my salad! However, there are plenty of ways to make this salad your own. Here are a more things you can add:
- Feta cheese
- Almonds
- Lime (or lemon) zest
- Balsamic glaze
- Red onions
- Kalmata olives

How to make a watermelon arugula salad
This is one of the easiest salads to make.
All you have to do is place the arugula on a large plate (or in a large bowl), followed by the watermelon. In a separate bowl, mix the freshly squeezed lime juice, olive oil, salt, and pepper. Mix well and pour on top of the watermelon and arugula.
Gently toss the salad and serve with fresh mint leaves!

How should I serve this watermelon arugula salad?
When I have family or friends over and I make this, I typically serve this salad deconstructed.
I’ll make the olive oil dressing but other than that I leave the watermelon, mint, arugula, and any other toppings separate for people to assemble themselves!
Am I able to store leftovers?
I personally wouldn’t recommend it. The arugula will get very soggy and begin to wilt after just a few hours!
