Whenever I start to feel under the weather, I make this chicken noodle soup. It’s hearty, delicious, and is ready in less than 30 minutes! Over the past few years, I’ve made this soup for friends and family and they’ve all said that it’s helped them feel better when they start feeling a cold coming on.
I’m super excited to share this recipe with you and hope that it helps you when you start to feel sick, too!
Does chicken noodle soup actually help you feel better?
Believe it or not, yes!
Studies have shown that eating a bowl of chicken noodle soup when you’re sick can help relieve cold and flu symptoms. Here’s how:
Chicken broth – While a good broth contains vitamins and minerals, this steamy liquid helps to improve upper respiratory systems.
Celery & carrots – Packed with antioxidants along with vitamins A and C, these veggies help to build a stronger immune system which, in turn, helps to fight off viruses.
Noodles – Depending on the type of noodles you use, you’ll find that they’re quite high in carbohydrates. This will leave you feeling full and satisfied after eating just one bowl of soup!
Fresh herbs – Parsley, thyme, dill, bay leaf, and Italian seasoning boosts the flavor and adds more antioxidants to the soup to aid your immune system.
Lemon juice – Adds way more vitamin C to the soup.
Ginger – Whether you’re using fresh grated ginger or ground ginger, you’ll notice your congestion dissipate almost instantly!
The star of the show, chicken – Chicken provides protein which helps to support the immune system!

Ingredients

- Chicken broth
- Water
- Rotisserie chicken
- Carrots
- Celery
- Olive oil
- Shallot
- Dried oregano & thyme
- Lemon
- Parsley
- Noodles
- Salt & Pepper
- *Optional – fresh grated ginger
Time to make chicken noodle soup!
In a large saucepan or dutch oven heat your olive oil and sauté the carrots, celery, shallot, and dry spices for about five minutes, stirring frequently. If you wanted to add fresh grated ginger to the chicken noodle soup this is when you’d add that in, too!
Next, add the water, chicken broth, chicken, and noodles to the saucepan and bring this mixture to a boil until the noodles are al dente. Then, cut the heat and add in your lemon juice, salt, pepper, and parsley.

Ladle your soup into a bowl and enjoy! I like to add a bit more lemon juice, fresh parsley, and cracked black pepper to my soup when it’s done.
Storing this chicken noodle soup
This recipe is not only my favorite because of how good it is, it keeps really well in the fridge for about five days. You can also freeze the soup and keep it for up to two months!

Ingredients
- 8 cups chicken broth (two 32 oz boxes)
- 4 cups water
- 1 rotisserie chicken, shredded
- 4 carrots, washed and sliced
- 4 celery ribs, washed and sliced
- 1 box rotini pasta (or whatever kind of pasta you’d like!)
- 1 shallot, diced
- 1 TBSP each: dried oregano & thyme
- 1 TBSP olive oil
- Juice from 1 lemon (+ optional lemon slices for garnish)
- 1/2 cup fresh parsley
- Salt & pepper to taste
Instructions

Notes
If you wanted to add fresh grated ginger to the chicken noodle soup, add it in when you sauté the veggies and spices.
