Say hello to your new favorite dessert: strawberry shortcake!
Growing up, I would eat this every summer with my grandparents at their vacation home. It’s always been one of my favorite desserts, but now that I’m older, I make everything from scratch.
Don’t get me wrong, I love those spongy store bought shortbread cakes and strawberry filling just as much as you do – but there’s something so rewarding about making each element yourself. Not to mention, it’s much healthier to make from scratch!
Ingredients
- Homemade sweet biscuits (find the recipe here)
- Strawberries
- Strawberry jam
- Sugar
- Lemon juice
- Whipped cream
If you don’t have time to make sweet biscuits, feel free to buy them! No judgement here 🙂
I will, however, ask that you don’t use bottled lemon juice for this recipe. Freshly squeezed lemon juice is best.

How to make strawberry shortcake
Rinse, dry, and slice the strawberries. Add half of them to a medium-sized bowl along with the sugar and mash them until puréed.
Then, add the jam and stir well to incorporate. Add the remaining sliced strawberries and lemon juice to the mix and gently toss to combine.
When you’re ready to assemble the strawberry shortcake, add a generous amount of the strawberry mixture to your biscuit and top with whipped cream. Feel free to add as much (or as little) of each as you’d like and enjoy!
How long will the strawberry mixture last?
The strawberry mixture should last for up to four days if stored in an airtight container in the fridge.
