You know how people say “I’ve never had a XYZ that I didn’t like”? Wellll, if I’m being honest, I’ve definitely had peanut butter cookies that I didn’t like. But not in a long, long time.

This is my message to you – stop being disappointed by those fall apart, crumbly peanut butter cookies you get from the store!

With just a few ingredients, you can make some of the best peanut butter cookies in the comfort of your home.

Ingredients

  • Peanut butter
  • Flour
  • Butter
  • Baking powder
  • Baking soda
  • Salt
  • Sugar
  • Brown sugar
  • Eggs
  • Vanilla bean paste
  • Optional – melted chocolate for drizzling

Whether you use crunchy or smooth peanut butter is up to you – I’ve used both and neither is better than the other! It really just depends on the texture you want when biting into your cookie!

The chocolate drizzle may be optional, but it gives these peanut butter cookies an almost peanut butter cup taste that I love.

How to make peanut butter cookies

To start, preheat your oven to 350 degrees Fahrenheit and line your baking sheet with parchment paper.

In a large bowl stir together the flour, baking soda, baking powder, and salt. Then, in the bowl of a stand mixer with the paddle attachment, beat the butter, peanut butter, and both sugars until light and fluffy.

Add in the eggs and vanilla bean paste and beat again. Gradually add in the dry ingredients and beat to combine.

Using a TBSP or cookie scoop, scoop the peanut butter cookie dough onto your prepared baking sheet about 2 inches apart. Then, with a fork, make a criss-cross pattern to help the cookies flatten a little. Bake for 10 minutes or until the cookies are golden brown.

Drizzle some melted chocolate on top and enjoy!

Frequently asked questions

There are soooooo many variations and questions when it comes to peanut butter cookies. Let’s quickly answer some!

Why are there fork marks in peanut butter cookies?

This is a commonly asked question when it comes to peanut butter cookies, and the answer isn’t all that exciting (if you ask me). The reason there are fork marks in peanut butter cookies is mainly because they don’t spread out as well as other cookies do and the fork marks help the cookies to spread and bake evenly!

Do you need to chill the dough?

When it comes to peanut butter cookie dough, you don’t need to chill it! You can if you want to, but it definitely isn’t necessary.

Can you use natural peanut butter in peanut butter cookies?

Sooooo – the short and sweet answer is yes.

However… you need to stir the peanut butter super well. We’re talking pour the peanut butter into a food processor or blender and stir that peanut butter like your life depends on it. Otherwise, you’ll get some pretty crumbly cookies that you most likely will not be happy with!
