For the past few weeks, this buffalo cauliflower has been my go-to lunch. It’s incredibly easy to make and has tons of flavor!

Whether you choose to serve this buffalo cauliflower for lunch or make it as an appetizer one thing is for sure: you’ll be hooked.

These are 100% vegetarian & vegan friendly. Typically when you think about buffalo sauce, you think hot wings – right?! If you’re looking for some spicy and delicious meatless meals, these buffalo cauliflower bites are the way to go!

They’re incredibly versatile! I always chop my cauliflower into smaller, bite-sized pieces but feel free to bake your cauliflower however you’d like! Whether you choose to have larger pieces or want to slice the cauliflower into “steak” like pieces, it’ll turn out delicious every time!

They’re so freaking easy to make. All you need is 50 minutes, very few ingredients, one bowl, and one baking tray. It doesn’t get much easier than that for a show stopping appetizer!

Ingredients

  • Cauliflower
  • All purpose flour
  • Water
  • Noble Made classic buffalo seasoning powder
  • Garlic powder
  • Onion powder
  • Chili powder
  • Cumin
  • Paprika
  • Buffalo sauce
  • Butter
  • Maple syrup

While any buffalo seasoning powder works, I highly recommend grabbing the Noble Made one here! It’s great in so many dishes, too.

Tip: If you want to make this buffalo cauliflower 100% vegan, swap the butter for some olive oil! You can barely taste the difference and you get an incredibly delicious dish either way.

How to make buffalo cauliflower

First, preheat your oven to 425 degrees Fahrenheit. While preheating, chop the cauliflower into bite size florets and set them to the side.

In a medium sized bowl, combine the flour, all of the spices, and water. Give it a good mix until you have a smooth paste like consistency. If it’s too thick, feel free to add one TBSP of water at a time. Remember, you want the mixture to be thick enough to coat the cauliflower and not runny!

Add the cauliflower florets to the bowl and gently toss to coat each one. Place the florets on a lightly greased baking sheet and bake for 20 minutes.

After 20 minutes, take the cauliflower out of the oven but keep them on the baking sheet. As they slightly cool, mix the buffalo sauce, butter, and maple syrup in another medium sized bowl. Carefully place the cauliflower florets into the bowl with the hot sauce to coat them.

Then, place the florets back onto the same baking sheet and bake for another 20 minutes. If you’d like, feel free to broil the cauliflower for 2-4 minutes for some extra crunch!

Serve immediately with celery, ranch, or some green onions on top and enjoy.

For the baked cauliflower:

  • 1 large cauliflower head
  • 1 cup all purpose flour
  • 1 cup water
  •  1 TBSP noble made classic buffalo seasoning
  • 1 TBSP garlic powder
  • 1 TBSP onion powder
  • 1 TSP chili powder
  • 1 TSP cumin
  • 1 TSP paprika

For the buffalo glaze:

  • 1 cup buffalo sauce
  • 2 TBSP butter
  • 2 TBSP maple syrup

Instructions
