The Best Birthday Cake Biscotti

Birthday cake biscotti is a fun twist on your average birthday cake! Not to mention, it proves biscotti doesn’t have to be bland and boring!

Ingredients

Scale
  • 2 cups flour
  • 3/4 cups sugar
  • 5 TBSP butter
  • 2 eggs
  • 1 TSP butter extract
  • 1 TSP vanilla 
  • 1 TSP baking powder
  • Rainbow sprinkles – as much as you want
  • White chocolate – to dip or drizzle, optional

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. Set to the side.
  2. Cream the butter and sugar together in a large bowl. Then add the eggs, vanilla, and butter extract and mix well to combine.
  3. Add in the flour and baking soda. Beat until fully combined, then fold in the rainbow sprinkles with a rubber spatula. Using your hands, divide dough into two equal pieces and form into long oval slabs on your prepared baking sheet. You want each slab to be at least 1/2 inch thick.
  4. Bake for 30 minutes, then allow the biscotti to cool on the baking sheet for at least 25 minutes.
  5. Once cooled, slice the dough with a serrated knife into 1 inch slabs to form the classic biscotti shape. Place the cut biscotti slices upright and bake for an additional 12 – 15 minutes, or until they’re lightly golden brown in color.
  6. Allow the birthday cake biscotti to fully cool then drizzle white chocolate on top! Enjoy your birthday biscotti alone or with a nice cup of coffee.

Notes

* The cook time includes the first bake at 30 minutes as well as the second bake at 15 minutes.
