Let’s be honest… after a long day at work the last thing you want to do is make a super intensive meal. With my beef stroganoff recipe, you’ll be eating dinner within 20 minutes or less!

I’ll be the first to say…

… This is nothing like your traditional beef stroganoff . There are a few shortcuts I take when making my beef stroganoff but I can say that this beef stroganoff recipe is my favorite to make.

As you’ll soon see, I don’t add mushrooms in my beef stroganoff. I’ve never really cared for them and always found myself picking them out of the beef stroganoff as a child. Instead, I use a can of cream of mushroom soup and, while the mushrooms may be absent, the flavor is not!

That said, if you want to add mushrooms to your beef stroganoff recipe, please feel free to! Regardless, let’s get ready to make beef stroganoff!

Ingredients

To make my beef stroganoff recipe, you’ll need:

  • Beef tenderloin – I typically always use beef tenderloin in my been stroganoff recipe! However, you can also use ground beef to make this recipe that much easier to make.
  • Egg noodles – Now, I know that some people serve their homemade beef stroganoff with mashed potatoes, but I’m an egg noodles kind of gal. Feel free to swap if you’d like!
  • Beef broth – Beef broth is used to help make the creamy stroganoff sauce. I’ve seen a few people say that they swap beef broth for chicken broth, but I really wouldn’t recommend it. If anything, feel free to use vegetable broth in place of beef broth.
  • Cream of mushroom soup – Like I said before, I’m not a big mushroom girly! To keep those delicious, earthy flavors in my creamy sauce, I use a can of cream of mushroom soup. It tastes the same and makes the stroganoff sauce so creamy.
  • Onion – Adds more flavor!
  • Freshly minced garlic cloves – Similar to the onion, the freshly minced garlic cloves add more flavor to the dish!
  • Dijon mustard – Used to help flavor the stroganoff sauce
  • Sour cream – Used to help thicken the stroganoff sauce
  • Worcestershire sauce – Adds more flavor to the beef stroganoff.
  • Flour – The flour is added the the beef and helps the stroganoff sauce thicken!
  • Salt and pepper

*Optional- Feel free to add some parsley to the beef stroganoff, too!

How to make homemade beef stroganoff

Now that you have the ingredients in front of you, it’s time to make beef stroganoff!

Begin by boiling the egg noodles in a pot of water according to package directions. Once they’re fully cooked, drain and place back into the same pot and put the lid on to keep the noodles warm while you finish the beef stroganoff.

While the pasta water is boiling, sauté the onion until translucent along with the freshly minced garlic cloves. Then, remove from the pan. The pasta water should be boiling at this point too, so add the egg noodles and cook according to package directions – then follow the step above!

Next, season the beef tenderloin with salt and pepper and sear each side. After searing each side of the beef, coat with flour. Cook for about 2 minutes and then add in the cream of mushroom soup, beef broth, dijon mustard, and Worcestershire sauce.

Once your stroganoff sauce is creamy, add the onions/garlic back into the pan and stir to combine. At this point, your beef stroganoff should be finished! Remove from heat and add in the sour cream. Mix to combine, then serve along with the egg noodles.

What cut of meat best for stroganoff?

While I typically stick to beef tenderloin, feel free to use:

  • Ground beef
  • New York strip
  • Boneless rib eye
  • Chuck roast

Just make sure that the pieces are cut into thin strips!

What is the best substitute for sour cream in stroganoff?

The absolute best substitutes for sour cream in an easy beef stroganoff are:

  1. Full-fat Greek yogurt
  2. Cream cheese

Similar to sour cream, Greek yogurt has that acidic “tang” that best matches the flavor of sour cream. Cream cheese works too, but I’d go for the Greek yogurt over the cream cheese personally!

What do you eat beef stroganoff with?

Egg noodles and mashed potatoes are two of the most common things paired with beef stroganoff, but some other popular choices are:

  • Side salad
  • Rice
  • Roasted (or mashed) potatoes
  • Baked sweet potatoes

Feel free to use whatever you’d like!

What if I don’t want a thick beef stroganoff sauce?

To avoid a thicker beef stroganoff sauce, simply omit the flour!

Instructions
