Why you’ll love this sweet potato galette

It makes the perfect fall side dish. This sweet potato galette would be the perfect addition to a Thanksgiving meal!

It’s fairly simple to make. This galette is like a sweet potato casserole… but in an open faced pie form. All you need to do is mash the sweet potatoes, mix with some spices, place on your galette dough, and bake!

It can be made ahead of time. Feel free to make the filling for this galette up to 48 hours in advance – then, roll out some dough and bake!

Ingredients

To make this sweet potato galette, you’ll need:

  • Sweet potatoes – I used one large sweet potato for this galette, but if you have tiny sweet potatoes you may need to use two! Typically, one large sweet potato will be enough for a galette.
  • Sugar – For this sweet potato galette, you’ll need both granulated sugar and brown sugar. Feel free to use light or dark (or replace it with coconut sugar)!
  • Spices – I used cinnamon, ginger, and freshly grated nutmeg in my sweet potato galette.
  • Maple syrup – Optional, but the flavors pair beautifully!
  • Egg – Only needed for an egg wash before baking.
  • Mini marshmallows – One of the best ways to top sweet potato galettes is with mini marshmallows!
  • Homemade galette dough – You can use store bought pie crust in place of homemade dough – but homemade is typically always better! Make sure you don’t accidentally pick up puff pastry (it’s much different than pie crust dough).

And that’s it! You’ll of course also need some parchment paper (or a silicone baking mat) and a baking sheet – but ingredients wise, that covers it.

I always recommend making your own galette dough but again, if you’re in a rush or aren’t the biggest fan of making dough a premade dough will work. If you do make your own, feel free to use all purpose or whole wheat flour!

How to make a sweet potato galette

First, make the galette dough. You can find the recipe here – you’ll want to make this about an hour and 15 minutes ahead of time (due to the chill + rest time). Take the galette dough out of the fridge and let it rest for 15 minutes on the counter.

Place the sweet potato in a pot of boiling water and simmer for 10 minutes or until it’s fork tender. Drain the water and let it cool for about 10 minutes. While the sweet potato is cooling, preheat the oven to 400 degrees Fahrenheit.

Once you’re able to handle the sweet potato, peel it and place it into a large bowl. Mash with a fork and add in both sugars, spices, and maple syrup. Mix until combined and set to the side. Sprinkle your workspace with flour and begin rolling the galette dough until you have a 12 inch circle. Then place the filling directly in the middle of the galette leaving about 2 inches from the edges.

Fold the edges over the mixture and brush the with a light egg wash. Sprinkle some sugar on top of the egg wash and bake for about 25 minutes. Remove the galette from the oven and top with the mini marshmallows. Place back into the oven for 10 minutes or until the galette is golden brown.

Let cool on a wire rack for at least an hour before cutting into it – enjoy!

Can I make a savory sweet potato galette instead of a dessert galette?

You can! Feel free to top you sweet potato galettes off with some herb oil, sage butter, crumbled goat cheese, pumpkin seeds, flat leaf parsley, or whatever you typically like to serve with sweet potatoes! Also, some melted butter on top of your galette would be a lovely touch once it’s finished baking.

If you’re after a more savory galette, I recommend cutting the sweet potato into circular potato slices instead of mashing it up. It’ll add a bit more elegance to your dish when serving it!

How long will my sweet potato galette last?

Cover and store your galette in the fridge for up to four days! The marshmallows may melt into the sweet potatoes – this will make your galette much sweeter! Feel free to top with additional marshmallows but they’re not needed at all!
