If you’re looking for a super healthy breakfast packed with omega 3 fatty acids, protein, fiber, and more – this spiced peach chia pudding is for you!
This recipe proves that breakfast doesn’t have to be hard (and that breakfast can easily double as a dessert). This chia seed pudding is able to be made the night before, too!
Ingredients
For the chia pudding:
- Chia seeds
- Milk
- Vanilla extract
- Maple syrup
For the spiced peaches:
- Peaches
- Butter
- Cinnamon
- Nutmeg
Optional toppings:
- Nuts
- Graham crackers
I use oat milk whenever I make chia seed pudding buuuut you can use any kind of milk you want. Also, I didn’t specify what type of nuts to use because any and all are good! I typically use pecans when I make this spiced peach chia pudding, but some almonds, cashews, or macadamia nuts would also be good.
How to make chia pudding
This particular recipe has two parts – making the chia pudding and making the spiced peaches to go on top. Both parts are incredibly easy and can be made the night before!
For the chia pudding in particular, stir the chia seeds, vanilla extract, maple syrup, and milk in a large bowl. Let the chia mixture sit for about 10 minutes, then stir it to break apart any large clumps that have formed. If you want, you can eat the pudding within the hour or let it sit overnight.
For the spiced peaches, add the butter, peaches, cinnamon, and nutmeg to a saucepan. Allow the peaches to soften and remove from heat. It really should only take about 5-10 minutes. You can either place the spiced peaches on top of the chia pudding and refrigerate together, or make and add them when you’re ready to eat!
I also loooove adding in a crushed graham cracker and some pecans – I do this when I’m ready to eat though, as I don’t really want the graham crackers to be soggy!

What does chia pudding taste like?
Honestly, chia pudding alone doesn’t taste like much at all. If you were to use only chia seeds and milk, you’d most likely taste the milk you used.
If you used maple syrup and vanilla extract, it would taste like that! When it comes to the texture of chia pudding, it should be thick and creamy (sort of like tapioca pudding).
How long does chia pudding last in the fridge?
Chia pudding will last for about 5 days if stored properly in the fridge. Store it inside of a sealed mason jar for best results.
