This flavorful roasted tomatillo salsa verde recipe is one of my favorite things to dip tortilla chips into! It’s also perfect for tacos, homemade taquitos, or really any Mexican dish you love.

After making this tomatillo salsa verde once – you won’t want to buy it from the store again! It’s, in my mind, the best salsa verde recipe out there.

Why you’ll love this roasted tomatillo salsa

The most flavorful salsa verde out there. Between the freshly squeezed lime juice, cilantro, and the flavors you get from the roasted tomatillos, this salsa verde recipe packs so much flavor.

Can be used as a dip or a sauce! Dip your favorite chips in this sauce or pour it on top of tacos, taquitos, or rice for a bit of added flavor.

It’s easy to make. Apart from roasting the tomatillos, all you really need to make this green salsa is a food processor! Simply put, all you need to do is broil + blend. So. Easy.

Ingredients

To make this roasted tomatillo salsa verde, you’ll need:

  • Tomatillos – The star of the show! I use about 12 in my roasted tomatillo salsa verde.
  • Serrano peppers – I personally think a serrano pepper tastes better in this salsa verde recipe than a jalapeño – however, either one can be used!
  • Fresh lime juice – You can’t beat the fresh stuff. Fresh lime juice adds so much flavor to this roasted tomatillo salsa verde!
  • Fresh cilantro – I use an entire bunch of cilantro. Feel free to adjust as you see fit.
  • Garlic cloves – The more garlic you use, the better! I used six cloves – feel free to use an entire head of garlic if you’d like.
  • Salt – To help with the taste. A little goes a long way!
  • Tortilla chips – I love to serve my quick roasted tomatillo salsa with Tostitos Hint Of Lime Tortilla Chips. Feel free to use what you like, but the lime chips are the best.

That’s all you need to make some of the best roasted salsa verde out there. If you don’t have a food processor at home, you can use a blender. However – the food processor will almost always yield better results (for me, anyways).

How to make roasted tomatillo salsa

Line a baking sheet with aluminum foil and set your oven to “broil”.

Then remove the husk from the tomatillos and gently wash them. Keep in mind that they’re a bit sticky to work with (I typically wear food safe gloves when working with tomatillos because of how sticky they are)! Dry the tomatillos and cut the stems off of the serrano peppers.

Place the serrano peppers and tomatillos on your prepared baking sheet and broil for about 15 minutes, turning every 5 minutes. Once they’re charred to your liking, remove from the oven and let cool slightly.

Add the roasted tomatillos and serrano peppers to a food processor along with your fresh lime juice, garlic cloves, cilantro, and salt. Blend until well combined.

Pour your roasted tomatillo sauce into a large bowl. Enjoy with some tortilla chips, on tacos, or whatever you’d like!

Frequently asked questions

Are tomatillos the same as green tomatoes?

They aren’t!

While tomatillos are sometimes called “Mexican green tomatoes”, they do not taste the same at all! A tomatillo is slightly more acidic and has a slightly less sweet flavor than an unripe (or ripe) tomato. The texture of a tomatillo is less watery than what you’d find inside a tomato, too!

Is homemade salsa verde the same as green enchilada sauce?

Nope, they’re quite different!

Green enchilada sauce is made with some kind of liquid and is cooked.

Tomatillo salsa verde doesn’t contain any liquid and is made with basic ingredients that are just blended together!

How long will my tomatillo salsa verde last?

Store in an airtight container for up to 5 days in the fridge!

Why should I roast the veggies for this tomatillo salsa?

The added flavor that it brings is well worth the 15 minutes spent broiling. You can skip this step if you’d like and you’d still have a flavorful tomatillo salsa verde!
