Looking for an easy breakfast recipe? You’ve found it – this puff pastry cobbler requires just a few ingredients and will blow you away with how flavorful it is.

For this recipe, I’ll be showing off my blueberry puff pastry cobbler but you can substitute with any jam or jelly you’d like!

What is a puff pastry cobbler?

Pretty much what it sounds like! A puff pastry cobbler is a layer of puff pastry, followed by your favorite jam, and topped with a crumble topping.

TBH, I’ve never seen (or even heard of) a puff pastry cobbler before making this. There’s truly nothing easier than unrolling a thawed puff pastry sheet and layering it with jam and some crumble topping and when I’m feeling too lazy to make an actual cobbler, I’ll turn to this recipe!

Ingredients

For the pastry itself, you’ll need:

  • One puff pastry sheet, thawed
  • Blueberry jam

For the crumble topping, you’ll need:

  • Flour
  • Brown sugar
  • Butter
  • Ground ginger

Simple, minimal ingredients but big flavors!

How to make a puff pastry cobbler

First, you have to thaw the puff pastry. You can do this one of two ways:

  1. Thaw overnight in the fridge.
  2. Thaw on the counter (this can take anywhere from 45 minutes to an hour).

I do prefer to thaw my puff pastry sheet in the fridge overnight but, let’s be real, after a long day I sometimes forget about it until the morning! Thawing puff pastry on the counter works just as well.

After the puff pastry has thawed, line your baking tray with a silicone baking mat and lightly dust some flour on it. Place the puff pastry on the floured surface and unwrap it. Lightly flour the puff pastry and using a rolling pin, roll it out a bit.

Then, add a few spoonfuls of jam to the top of the puff pastry. I had some blueberry jam on hand so I used that, but feel free to use whatever you like!

After the jam is layered on the puff pastry, make the crumble topping. To do this, add the flour, brown sugar, ground ginger, and lightly softened butter to a mixing bowl. Using your hands, gently mix everything together until you have achieved the crumble like topping! This shouldn’t take more than one minute to do.

Sprinkle the crumble topping onto the jam, then bake for 30 minutes or until the puff pastry is golden brown.

Serve alone or with a small scoop of ice cream (or whipped cream) and enjoy!

Can you store this puff pastry cobbler?

Puff pastry is typically best when eaten a few hours after cooking. If you do have leftovers, I recommend wrapping them with saran wrap and consuming them within a day.

For the puff pastry, you’ll need:

  • 1 sheet thawed puff pastry
  • 1 1/2 cups jam of your choice (I used blueberry)

For the crumble topping, you’ll need:

  • 1/2 cup flour
  • 1/2 cup dark brown sugar
  • 5 TBSP butter, lightly softened
  • 1 TSP ground ginger

Instructions

  1. First, thaw your puff pastry overnight in the fridge or on the counter for up to an hour. For simplicity of the recipe, we’ll thaw it on the countertop. 
  2. Line a baking tray with a silicone baking mat and lightly dust it with some flour. Place the puff pastry on the lightly floured surface and unwrap it. Add a bit of flour to the puff pastry and with a rolling pin, roll it out a bit.
  3. Add the jam to the top of your puff pastry and spread it out. Keep in mind that the closer you go to the edge of the pastry, the more jam will leak over! I like to leave a bout an inch or so from the border.
  4. Set the puff pastry & jam to the side and make the crumble topping. Add all ingredients for your crumble topping to a small bowl and gently mix with your hands until you have a crumble texture.
  5. Sprinkle the crumble topping onto the jam and bake for 30 minutes or until the puff pastry is golden brown.
  6. Serve alone or with some ice cream (or whipped cream) and enjoy!

Notes

* Time includes the hour needed to thaw puff pastry!
