What is butterfly pea powder?
Butterfly pea powder comes from dried butterfly pea flowers (also known as Clitoria ternatea – super weird name, I know).
These flowers grow in Asia and are often dried, though you can purchase butterfly pea powder (which is what I used in this recipe)! If you purchase dried butterfly pea flowers, you can steep them in water to make an assortment of drinks and, in some cases, desserts and rice dishes!

What does butterfly pea powder latte taste like?
While butterfly pea powder comes from flowers, the taste itself is not floral.
Some have said that butterfly pea powder tastes like green tea while others have tasted light notes of chamomile. To me, the taste is a bit marshmallowy!
The best way to find out what butterfly pea powder tastes like is to make a latte for yourself!

Ingredients
To make this butterfly pea latte, you need:
- Butterfly pea powder
- Oat milk
- Maple syrup (or honey)
- Vanilla extract
- Hot water
If you’d like to add a bit of flavor to your butterfly pea latte, I highly recommend adding in some lavender syrup.
How to make a butterfly pea powder latte
Add the oat milk, maple syrup, and vanilla extract to a small saucepan and simmer over medium low heat.
While the milk is simmering, add the butterfly pea powder to a small bowl and mix in the hot water. Using a bamboo whisk (AKA a matcha whisk), vigorously mix the water and powder together until smooth.
Once the milk is warmed to your liking, add in the butterfly pea mix and pour your latte into a cup. Don’t stop there though – now you’re going to froth it together!
Using a handheld milk frother, froth your butterfly pea powder latte within the cup until your latte has frothed a bit. This should only take about a minute to do!
Now all that’s left is to enjoy your blue matcha!
